one pot tomato rice

so this was one of the first recipes i learned by heart at the age of 11 years old!

ingredients:

produce: tomatoes. doesn’t matter what kind, but i’d recommend TOVs, green onions (optional)
misc: white jasmine/sushi rice, olive oil, salt, pepper

directions:

this all takes place in a rice cooker btw
make rice as normal (wash raw rice, measure to finger or whatever) except replace the volume of SOME water with a whole raw tomato. no prep other than washing the tomato. dont even need to cut it or boil it.
add a tablespoon or two of olive oil depending on how much rice you’re making
salt and pepper as needed
turn rice cooker on as normal
once done, mix everything together! the tomato should be omega mushy and it will pretty much blend with the cooked rice. then let it steam for a little bit more (keep warm setting) and you’re good. yummy delicious tomato rice
(optional) this is a perfect rice for an omurice base. make an omelette and slap it on top, ketchup and sriracha and salt and pepper it and you’re sooo backkk. get that demiglace/curry and omg you are a CHEF
