one pot tomato rice
so this was one of the first recipes i learned by heart at the age of 11 years old!
ingredients:
- produce: tomatoes. doesn’t matter what kind, but i’d recommend TOVs, green onions (optional)
- misc: white jasmine/sushi rice, olive oil, salt, pepper
directions:
- this all takes place in a rice cooker btw
- make rice as normal (wash raw rice, measure to finger or whatever) except replace the volume of SOME water with a whole raw tomato. no prep other than washing the tomato. dont even need to cut it or boil it.
- add a tablespoon or two of olive oil depending on how much rice you’re making
- salt and pepper as needed
- turn rice cooker on as normal
- once done, mix everything together! the tomato should be omega mushy and it will pretty much blend with the cooked rice. then let it steam for a little bit more (keep warm setting) and you’re good. yummy delicious tomato rice
- (optional) this is a perfect rice for an omurice base. make an omelette and slap it on top, ketchup and sriracha and salt and pepper it and you’re sooo backkk. get that demiglace/curry and omg you are a CHEF
